Tips for Making Gooey Chocolate Chip Toffee Bars

  • Weigh your ingredients. I don’t give you much of a choice, as I don’t include volume measurements, but it’s worth re-stating regardless.
  • Don’t overbake. These bars will be perfectly gooey if baked properly. You can eve start checking for doneness a few minutes sooner than stated, if your oven tends to bake fast or run hot.
  • Use unsalted butter, to prevent overly salty cookie bars.
  • Use one large egg. Use one large egg. Don’t use an egg that’s too large or too small, as this will impact the texture of your bars greatly. A large egg in the US is about 70 grams in shell. Bring the egg to room temperature before using.

  • Pour the sweetened condensed milk evenly over hot crust.
  • Sprinkle the toffee bits over the sweetened condensed milk layer.
  • Sprinkle the reserved crumb mixture and the reserved chocolate chips evenly across the top.

Notes

Chocolate Chip Toffee Bars will keep well inside an airtight container for about 3 days. Store at room temperature.
I haven’t tried these bars with any substitutions, but other types of nuts and varieties of chocolate will work too – just note that this will change the overall flavor, so some experimentation may be needed.
