Ingredients
150gramsall-purpose flour
100gramsbread flour
1teaspoonbaking powder
¾teaspoonbaking soda
½teaspoonsalt
140gramsbutterat a cool room temperature (65°F/18°C)
110gramsgranulated sugar
140gramsdark brown sugar
1large eggat room temperature
2teaspoonsvanilla extract
190gramschopped chocolateI prefer bittersweet
Instructions
In a medium bowl, combine all-purpose flour, bread flour, baking powder, baking soda, and salt. Set aside.
In a large bowl with an electric mixer, cream together butter, granulated sugar, and dark brown sugar, until light and creamy, 2-3 minutes. Scrape down bottom and sides of the bowl.
Add egg and vanilla and mix until combined. Scrape down the bowl.
Add the flour mix, and combine on low speed until almost combined. Scrape down the bowl.
Add chopped chocolate and mix until evenly distributed. Do not overmix.
Using a large 3-Tablespoon cookie scoop, portion dough into balls, and place in a Ziploc bag or airtight container. Refrigerate overnight, or at least 2 hours, before baking.
When ready to bake, line baking sheets with parchment or a silicone baking mat, and preheat oven to 350°F / 175°C. Bake for 12-14 minutes, rotating halfway through. You want the cookies to just be golden brown at the edges and slightly damp in the middle.
Cool on the baking sheet for at least 20 minutes before serving (if you can!). Cookies will keep inside an airtight container for up to 4 days.
Notes
Trick for Perfectly Round Cookies: Immediately once pulled from the oven, use a round cookie cutter slightly larger than the cookies to swirl around the edge of each cookie, to ensure perfectly round, slightly thicker cookies.Optional Salt on Top: Add flaked sea salt on top of each cookie prior to baking, for that perfect salty-sweet twist.
